I confess, I freaking LOVE avocados!  I buy them all the time, try to eat 1/2 an avocado every day, and am always trying to come up with new ways to serve 'em up.  As we all know, there's nothing better than good ole' avocado toast, but as I'm trying to lean out for summer, which includes eating less bread (if any), the toast part of avocado toast isn't an option any more.  This leaves me to come up with new ways to enjoy avocados and this Tuna Stuffed Avocado Bomb is one of my favorites.  It's delicious, nutritious, protein-packed, and best of all, kid-approved!  My 10-year old begs me to make these for lunch every weekend.

1. Cut the avocados in half, remove the seed, and scoop out the meat carefully, setting the skins aside for later. 

2. In a large bowl, combine the avocado, tuna, red onion, and pepper.

Note:  Make sure that your tuna is dolphin safe and comes in a glass jar (preferable!) or BPA-free can.

3.  Squeeze the juice of 1/2 of a large lime over everything and mix.

4.  Season with Himalayan Pink Saltorganic pepperorganic Cayenne Pepper (optional if you like a little heat), and organic turmeric powder (also optional, but I try to sneak in some turmeric, one of the most powerful natural anti-inflammatory foods on Earth, whenever and wherever I can.) 

5.  Scoop the mixture back into the avocado skins you set aside at the beginning, and garnish with some cilantro.
